Getting back into MC after.... fucking years.
Any suggestions for mods? I remember nether ores, tree cutter and there was one more that I really liked that had to do with placing things into a furnace of sorts to create stronger materials.....

Depends on what you want, do you just want a better vanilla experience? If so the Vanilla+ modpack is probably up your ally. If you just want here and there tweaks to vanilla, it just depends on what you want.
Tech Mods: Thermal Expansion (Is probably my favorite), Build Craft, Immersive Engineering.
Storage: Applied Energistics, Better Barrels, Iron Chests (Not just iron chests, just what it is called), Storage Drawers is a good one too.
Magic: Botania (My favorite), Blood Magic, Thaumcraft
Building: Carpenters Blocks (This one can get laggy), Chisel (This one is probably your best bet if PC Cant handle things well).

FTB (Feed The Beast) contains nice mod packs that are put together by a modder and verified for consistency. The last couple mod packs I played on were Direwolf and Ultimate. Since then, a bunch have come out.
Probably one of my favorite mods is the Mystcraft mod. It gets its concept from the old Myst games, where you can create portals to new worlds. It's tricky to pull off on a server, because each player can create dozens of new worlds. This can eat up memory and storage quickly on the server. It's fun because the worlds are all unique and strange, with some of them being unstable (the world literally falls apart, collapsing into the void, over time).

Bloody made some nice suggestions for an individual mod installation. Other than that the mentioned FTB packs are pretty nice if you don't want to worry about a proper installation.
Unfortunately a lot of FTB packs are going the way on expanding with tech stuff, that's not really my taste (I personally prefer a more "RPGish" touch).

By RPG do you mean like the Dungeon Crawling mods? Or like skill leveling such as the one that adds Elder Scrolls type skill leveling?

The only modded Minecraft server that I've played, which had a working mechanic, was Minez. It was basically DayZ on Minecraft. It was ok, got old after awhile for the same reason DayZ got old for me.

Oh, more like the second group.
But far more important for me always were mods like Millenaire - if configured properly, this really got me into it.
