Why not add more information into the third dimension?
Because third dimension lies and no one wants to play with it. In a 3d pie chart the ones closest and furthest from you get bigger and the ones on the sides get smaller. In 3d bar chart depending on style it's hard to see the right height for them and the closes one looks the biggest.

This is true but it would require the Z axis to be present in the chart to eliminate the illusion of a larger/bigger bar with some cold hard facts
